Xiamen, 11 September 2026 – Kempinski Hotel Xiamen joined hands with renowned local restaurant Hao Kou Wei Jian Xie Guan to present ‘A Taste of Xiamen | A Signature Crab Feast’, an exclusive culinary evening at Kaffee on 2. Ms. Shen Yue Zhi, founder of Hao Kou Wei Jian Xie Guan and affectionately known as the ‘Queen of Xiamen Fried Crab’, was specially invited to the event, where she joined the Kempinski culinary team in bringing authentic Minnan flavours to the five-star table.
Inspired by the culinary heritage of southern Fujian, the collaboration brought together traditional craftsmanship and contemporary hospitality, showcasing time-honoured flavours deeply rooted in the memories and everyday food culture of Xiamen.
Founded in 1999, Hao Kou Wei Jian Xie Guan has been dedicated to traditional Minnan cuisine for nearly three decades. Its signature Xiamen-style fried crab, inspired by a recipe passed down from Ms. Shen’s mother, has become a defining dish of the restaurant. The brand continues to uphold traditional handmade techniques and carefully selected ingredients, preserving the essence of local culinary heritage across generations.
In 2017, the restaurant was passed on to Ms. Shen’s eldest daughter, followed by the involvement of her younger daughter in 2024. From a family tradition to a well-established local brand, three generations have remained committed to preserving the craftsmanship behind their signature dishes. At the heart of this legacy is a simple yet meaningful dish – Fried Crab – serving as a culinary link between family memories and the distinctive flavours of Xiamen.
In 2026, Ms. Shen and her traditional Xiamen-style fried crab were featured on Zhejiang Satellite TV’s Battle of a Hundred Chefs, bringing wider attention to this iconic local speciality and highlighting the distinctive culinary heritage of southern Fujian.
As the centrepiece of the evening, Hao Kou Wei Jian Xie Guan presented three of its signature creations, including Signature Fried Crab, Handmade Double-Yolk Rolls and Seafood Rolls. The Signature Fried Crab, prepared on site by Ms. Shen herself, followed the traditional Tongan-style technique, allowing the natural sweetness and rich flavour of the crab to shine through.
The Handmade Double-Yolk Rolls featured salted duck egg yolks wrapped in handmade pastry and pan-fried until crisp and golden, offering a distinctive interpretation of a traditional Minnan snack. The Seafood Rolls, made with fresh prawns and seasonal vegetables, combined carefully selected ingredients with traditional handmade techniques to create a dish that was fresh, savoury and distinctly local.
For the evening, the culinary team at Kempinski Hotel Xiamen also drew inspiration from the food culture of Xiamen and southern Fujian to create a selection of exclusive local specialities. From seafood and hearty dishes to traditional soups and handmade delicacies, the menu offered guests a diverse expression of the region’s culinary character.
Highlights included Laver Mixed with Shrimp Skin, Tonic Diet Duck Soup, Curry Beef Ribs Quanzhou Style and Boiled Fish with Soy Sauce, the latter prepared live for guests. Together, these dishes showcased the Minnan culinary philosophy of celebrating the freshness of ingredients, precise cooking techniques and the natural flavours of the produce.
The dessert selection continued the journey through local food memories with a collection of traditional favourites, including Four-Fruit Soup, Peanut Soup, Mochi, Orange Cakes and Pineapple Cake. Familiar local flavours brought a warm and nostalgic finish to the evening.
The collaboration with Hao Kou Wei Jian Xie Guan marks another step in Kempinski Hotel Xiamen’s ongoing exploration of local culinary culture and the distinctive flavours of the city.
